Christmas time always means that there will be all different types of cheese in the fridge, which during the rest of the year I'm too cheap to buy, plus ham, salami, pickles and stuff. Along with all sorts of crackers and bread in the cupboard. Which means some hummus needs to be made, yay. This is my father's awesome recipe.
HummusMakes a lot.1 medium sized potato
1 can garbanzo beans (796ml), drained and liquid reserved
1 cup tahini
6 cloves garlic
1 cup lemon juice
1-1/4 cup olive oil
3/4 tsp salt
3/4 tsp pepper
1/2 cup parsley, chopped, optional
Boil the potato with the skin until tender, let it cool then peel it, you can do this the night before.
With a hand blender, blend together the garlic cloves, tahini and 1/2 cup of the reserved bean liquid, if it's very thick you can add some more of the liquid.
If you have a Kitchen Aid mixer, or something similar that has a
grinder attachment, use that to cut the garbanzo beans and potato. Alternately, you can use a
ricer.
Add together all the ingredients, except parsley, and mix at low speed with the flat beater attachment for, at a minimum, 10 minutes.
Mix in parsley, which is more for decoration then anything else. Enjoy.
